Spaghetti Squash Amazingness

Ok… you should know this by now…. I dont do measurements..

Spaghetti squash cut in half then turn over (squash side down. skin side up) on a baking pan. *no oil no anything. bake around 350* for 30-45 minutes. however long it takes to put the baby down and clean the house… ha!

in the mean time through the veggie ground round in a pan over medium heat with a can of some tomato sauce.

go do some more stuff. shower? flip the laundry?

add half a diced/sliced whatever way you want to cut it up. (onion)

some carrots, bell peppers. whatever veggies you have in the house.

I added. asparagus, spinach and edemame. The veggies dont really matter. its all in the spice.

4 cloves of diced/ smashed garlic at the end of the game. and some curry powder. I added maybe 2 teaspoons? of my favorite curry powder.

 

by the time all this is mixed up, the squash is done. you can make it look sexy and be gentle with scooping out the squash and then adding the pan mixture on top like sause; or you can just giver and mix it all together. I make it without any salt, as i find that i get the best flavours with the curry and garlic. If your a salt person. ADD IT ONCE ITS ON YOUR PLATE AND AFTER YOU HAVE TASTED IT. There is sodium in the veggie ground round. Enjoy!
