So Awesome! This is what I did.
4 bunches of parsley. shopped finely. (messy)
2 small grilled zucchini
2 tomatoes diced
1 avocado diced
2 cups of quinoa/buckwheat
1 bunch of mint diced
2 lemons squeezed (and the zest of 1 lemon diced? chopped up)
some olive oil
tiny dash of salt
You can eat it as a side, or what i like to do is add it to a wrap with some hummus. Soo good for you and soo yummy!
